Ingredients
24King's Hawaiian slider buns
4tbspbutter (melted)
1tspgarlic powder
1tspdried parsley
2lbschicken breast bites
1/4-1/2cuphot honey
1.5lbsbacon
8-12ozlettuce
2largetomatoes
1/2tspsea salt
1/2tspblack pepper
1/3cupmayo
Instructions
Prepare the 2 lbs chicken breast bites according to package directions, if necessary. Toss in a large bowl with the 1/4-1/2 cup hot honey.
Cook the 1.5 lbs bacon in a frying pan until crisp, or line a baking sheet with parchment and bake the 1.5 lbs bacon on it at 425 degrees F for about 20-25 minutes, or to your liking. Transfer to a paper towel-lined plate and set aside to drain.
While the chicken and bacon are cooking, slice the 2 large tomatoes into 8 or 10 slices, and cut each in half to create half-moon shapes. Set aside on a paper towel. Crush the 1/2 tsp sea salt over the tomatoes and let sit to draw out the water.
Carefully cut the 24 King's Hawaiian slider buns in half, slicing the top away from the bottom. I find it's easiest to keep the individual buns together rather than tearing them apart at this point. (You'll cut the assembled sandwiches later.)
Place the bottom of the buns on a baking sheet with the cut surface facing up. Place the top portion of the buns on the baking sheet with the top (uncut surface) facing up.
Mix together the 4 tbsp butter (melted), 1 tsp garlic powder, and 1 tsp dried parsley. Spread over the top of the buns and the inside of the bottom buns. Broil on high until golden, watching carefully—each oven is different; it takes mine about 5 minutes.
Place the bottom section of toasted buns on a cutting or serving board. Layer on the hot honey chicken, bacon, tomatoes, and 8-12 oz lettuce. Sprinkle everything with 1/2 tsp black pepper, or a little more, if you'd like.
Spread 1/3 cup mayo (more or less to your liking) on the inside of the top set of buns, and place on top of the BLTs. Carefully slice the sandwiches apart along the bun seams and serve warm or chill until ready to enjoy.
